AIESEC國際志工菁寮無米樂農村割稻飯走進藝術殿堂 在國立台灣歷史博物館的一天

2016年12月27日,台南後壁區菁寮農莊無米樂社區的村民受邀前往位於台南市的台灣歷史博物館,為為期長達九個月的「好好吃:臺灣飲食文化特展」掀開序幕。這場飲食饗宴由菁寮傳統的嫁妝一牛車打頭陣,社區志工身穿花布圍裙且頭戴斗笠,陸續端出菁寮無米樂荷蘭井湧泉民宿的「割稻飯」,上演了一場與眾不同的上菜秀。在開幕儀式與來賓享用這場饗宴的期間,菁寮社區的老吾老千歲鼓樂團現場演奏,美妙的樂聲迴盪在會場中。

On December 27, 2016, villagers from the Jingliao WUMILE community, which is located in Tainan were invited to visit the National Musuem of Taiwan History as there is a nine-month long “The Story of Dietary Culture”. The traditional ox-cart dowry from Jingliao was presented in the exhibition. Also, the community volunteers were wearing the traditional aprons and the traditional hats during the time they gradually served the dishes. Throughout the exhibition, there is also a live performance from the chinese orchestra from Jingliao.

對於年輕人來說,割稻飯或許不過是普通的一頓大碗公飯,然而它賦予的意義並不那麼簡單。早在三四十年前,農村的收成季節總是十分熱鬧。由於收割都需要大量的人工,但因為經濟不甚寬裕,農人們都會邀請親朋好友和鄰居前來幫忙。收割結束後,為了感激這群朋友,農人們除了準備一頓感恩餐祭天之外,也會宴請這些“伴工”或者“換工”的朋友吃一頓飯。這就是割稻飯的由來。對於長輩們來說,這頓飯吃的是滿滿的回憶,也代表著古早的人情味。

For young people, “Ge Dao Rice” may be just an ordinary meal but it actually has a very special meaning especially for the elders. Three or four decades ago, the harvest season was always very lively. As harvesting requires a lot of labor, and at that time the economy is not well-off, farmers will invite friends and neighbors to help out . After harvest, the farmers will prepare a thanksgiving meal for the friends who helped out. This is the origin of “Ge Dao Rice”. For elders, this meal is full of memories.

此次饗宴上的割稻飯是由菁寮老街「無米樂荷蘭井湧泉民宿」的社區媽媽所準備。菜色十分豐富,所呈現的菜餚有白斬雞、番茄炒蛋、古早味菜脯、蒸魚、五花肉、各色各樣的青菜以及刈包。縱然只是家常便飯,但是來賓們都吃得停不下來,讚不絕口,都說這是一頓用「心」煮出來的菜餚。誰說不是呢?身為AIESEC國際志工的我們就見證了這一頓頓菜餚背後的故事。

This feast is prepared by the volunteers of the community. There are many dishes, which includes boiled chicken, tomato scrambled eggs, pickled radishes, steamed fish, pork, all kinds of vegetables and pork bun. Even though it is only a homemade rice,  but the guests are enjoying eating. As AIESEC global volunteers we have witnessed the story behind this cuisine.

古早味菜脯的製作過程相當繁瑣,從收割蘿蔔到醃製成菜脯都是一滴滴心血的累積。在這大冬天裡,社區媽媽需要抗著刺骨的寒冷到田裡收割蘿蔔,之後再用水把一顆顆蘿蔔清理乾淨。把蘿蔔切成片後,用人力加鹽巴慢慢搓揉將它們的纖維軟化及脫水處理,以讓特製的古早味醬料能夠在之後的醃製過程中較容易地被吸收。從拔蘿蔔到醃製過程大約耗個三至四天的時間完成。另外,刈包的餡料包括了鹹菜、花生粉,白糖粉、五花肉最後加上香菜。當中的鹹菜也都是由社區媽媽們親自收割和醃製雪裡紅鹹菜所製作而成。她們日出而作,卻未必能日落而息。

The process of making the pickled radishes is quite complicated since it needs uncountable effort from the process of harvesting white radishes to pickled preserved food. In this cold winter, the community workers need to harvest the radishes while resisting the coldness, and also cleaning the radishes. Then, they have to add salt and dehydrate the radishes after they have been cut into pieces so that the specially prepared sauces can be more easily to be absorbed during the pickling stage. These processes takes up to 3 to 4 days. In addition, the filling of pork bun includes salted vegetables, peanuts, flour, and pork meat. The community workers are working really hard to plant and harvest the vegetables to produce the salted vegetables.

在民宿幫忙的這兩個星期裡,我們親自參與這些過程,方能體會這些菜餚的來之不易,並心存感激。“誰知盤中飧,粒粒皆辛苦”,看似簡單又平凡的食物,其實背後所付出的心血遠超我們的想像。向所有辛勤勞動,讓我們能夠吃上美味佳餚的廚師以及準備食材的人們致敬!

As AIESEC global volunteers, we are fully engaged in all the process during the two weeks we stayed in the homestay. We sincerely appreciate all the dishes which are prepared by the community volunteers as we fully understand the difficulties and efforts they have put on. There is no doubt that we must pay a tribute to those who pay their hard work to prepare the dishes for us!
