Family Bakers in Penghu County, Xiyu Township Revives Traditional Meat Patty

The local bakery in Chidong Village, Xiyu Township, Penghu County has begun to make a traditional meat patty after being inundated with requests. This kind of meat patty is shaped similar to a moon cake and is a traditional festive food in Penghu. In the past it was only around the Moon Festival that the cake was produced but through one reason or another it has not been produced for more over 10 years. The patty is wonderfully aromatic and crispy and as a result aroused the interest of the local elderly population, taking them back to the good old years of yesteryear.

The patty needs to be baked at around 200 degrees, and closely watched by the baker, who waits until the patties are nearly baked before bringing them out and turning them for a final application of egg white glaze. The patties are then baked for a further 10 minutes or so before the patties are removed and the delicious aroma wafts. The proprietor informed us that these traditional meat patties are only found in Xiyu Township and consequently the meat filling has the authentic flavor of Penghu.

澎湖西嶼池東村的製餅店,應民眾要求,最近開始製作一種傳統肉餅,製程類似月餅,這種肉餅是澎湖西嶼鄉特有的節慶食品,早年是在中秋節才有做,但因時空環境轉變已消失十幾年,吃起來香香脆脆的,引起不少老人家的回憶。肉餅放進烤爐中要用近二百度的爐火烤熟,老闆娘三不五時就翻開烤爐觀看,等到肉餅烤熟繃開,就取出翻面、塗上蛋汁,然後再放進烤爐繼續烤,約十幾分鐘的時間,香噴噴的肉餅就出爐了。老闆娘說,這種傳統肉餅只有西嶼鄉才有在做,所使用的內餡都是澎湖傳統的味道。
